Vegan Cucumber Dill Mini Sandwiches

If you are going to the beach, a baby shower, or some kind of tea party, I can think of no better thing for you to make than cucumber sandwiches. These adorable bite-size sandwiches are light, refreshing, and you need to make them before summer is over.

Vegan Dill Sandwiches

The sandwiches are extremely simple and don’t really look like sandwiches at all. But technically they are, and they consist of white bread cut into circles, vegan dill dip made with soft tofu, and thinly sliced cucumbers.

I don’t know that I’ve ever bought a loaf of white bread, but every cucumber sandwich recipe I looked up pretty much mandated it, and it makes sense. White bread feels more appropriate for cucumbers than a hearty, 7-grain, oat style. I still felt weird buying it. I wanted to tell the person behind me that yes, I know wheat bread is healthier. But I’m making cucumber sandwiches, so please make an exception and stop judging me.

Vegan Cucumber Dill Sandwiches
The dill spread  is amazing and can also be eaten as a vegetable dip. I used fresh dill weed, but you can use dried as well. Dill seed is not the best choice because of its granular texture, but use it if you must.

Dill is such a dainty herb. It’s feathery, wilts quickly, and can’t stand up to heat. And its name means “to soothe or to lull.” If dill were a person, I would probably not like him nearly as much.

VEGAN CUCUMBER DILL SANDWICHES

Makes about 20 mini sandwiches – Recipe adapted from Vegetable Gohan

Ingredients:
  • Loaf of white bread
  • 1-2 cucumbers
  • 1 package of soft tofu
  • Juice of 1 lemon
  • 2 T vinegar
  • 1 T garlic powder
  • 1 T dried parsley
  • 1/4 cup chopped fresh dill weed
  • salt and pepper to taste
Instructions:
  • Press the rim of a glass into the center of each slice of bread to make bread-circles.
  • Slice cucumbers very thinly with a sharp knife.
  • Blend tofu and remaining ingredients until smooth.
  • Place a tablespoon of dill dip onto each bread circle and press a cucumber onto each one.
  • Garnish with dill weed and serve.

    Tried these for dinner last night, delish! They didn’t look quite the same, but to those who have visual impairments such as old/dirty contacts or glasses, they were beautiful!
